The dough:
1 1/2 c warm water
1 tbs sugar
2 tsp salt
2 1/4 tsp yeast
4 1/2 c flour
2 oz butter, melted

To boil:
10 c water
2/3 c baking soda
To top:
2 tbs butter, melted
sea salt
Mix together the water, sugar, yeast and salt in a large bowl or using a stand-up mixer. Once combined, stir in the flour and butter. Knead the dough until it is smooth (about 4-5 min). Next, transfer the dough to an oiled bowl and cover with a damp cloth in a warm location. Allow it to rise for about 1 hour or until the dough has doubled in size.
As the dough is finishing rising, preheat the oven to 425°F and line 2 baking sheets with parchment paper. In a large bowl, bring the 10 cups of water and baking soda to a boil.
In the meantime, turn the dough onto your work surface and divide into 8 equal pieces. Roll each piece into a 24 in rope and then slice into 1 ½ in pieces. Place your damp cloth over the dough to prevent it from drying out while you work with the other pieces.
Once the water has boiled, use a slotted spoon to lower a handful of the pretzel pieces into the water. Boil for 30 seconds flipping them in the water a few times. Remove the pieces with the spoon, draining them as best you can and place them on the parchment paper. Repeat with the remaining pieces.
Finally, gently brush your boiled pretzel bites with the melted butter and sprinkle with sea salt before transferring them to the oven. Bake until they are golden brown in colors (about 10-12 min), then serve warm.
