Fajitas


Fajitas are an easy, fresh Mexican favorite of ours. All you need is an episode of Burn Notice to go along with it!

1 lb chicken breast, sliced into thin strips
2 tbs. chili powder*
1 tsp. salt*
1 tsp. paprika*
1/4 tsp. garlic powder*
1/4 tsp. cumin*
1/4 tsp. pepper*
3 bell peppers (we usually get the variety pack)
soft tortillas

Toppings: 
shredded lettuce
shredded cheese
sour cream
salsa

*You can buy taco seasoning or just throw random spices in until it smells good. (That’s what we do.) :)


Begin to cook chicken strips in a large sauté pan over medium high heat with a little bit of oil.

Core and slice the bell peppers into strips and toss into sauté pan along with chicken and all of your spices. Sauté until chicken is done and peppers are tender and soft. (You may cover it if you’d like as well.)

Cook/heat the tortillas according to the packaging instructions.

Spoon the chicken and peppers into the tortillas and top with lettuce, cheese, sour cream and salsa!


You can also make this recipe with shrimp, steak or add onions and leave out the meat for a vegetarian option.
