These amazing wraps taste like they’re from a corner bistro and the flavor of the soft apricot and goat cheese spread is to die for. It's perfect for a picnic lunch or a quick bite before an afternoon wedding (which is precisely what Jk, Paige, Graham and I did before my cousin's wedding :) and it felt fabulous to eat while all dressed-up!).
2 oz. goat cheese, softened
1/4 c apricot preserves (or your favorite marmalade)
3 tbs. chopped walnuts
1 tsp. fresh lemon juice
salt and pepper
2 large spinach flour tortillas
4 oz deli-sliced peppered turkey breast
2 cups lettuce
*This makes 2 wraps. Half of one of these large wraps is a perfect lunch size.
Combine goat cheese, preserves, walnuts, and lemon juice in a medium bowl. Season with salt and pepper.
Spread 1/4 c of the apricot-goat cheese mixture onto each tortilla.
Place turkey and lettuce on each tortilla and roll tightly. Slice in half at an angle and serve.
