Have you ever tasted Shepherd’s Pie? It’s AWESOME--and the perfect dish for a cold night. I like to serve this out of mugs, it seems to taste so much better :)
This recipe is for the easy crock pot version, but you can just as easily cook the whole thing in the oven.
2 lb ground beef
1 c chopped onions
1 package frozen mixed vegetables (16 oz)
2 cans tomato soup (10 ¾ oz)
mashed potatoes*
*The recipe calls for frozen, but we just make our own. It’s better and doesn’t take too long.
Quickly cook ground beef and onions in a large skillet until beef is brown and onions are tender. Drain off fat.
Combine beef mixture, frozen vegetables, an soup in the crock pot.
Cook on LOW for 6-8 hrs or HIGH for 3-4 hrs. Serve hot with mashed potatoes on top.

(To make in the oven, cook the beef, onions, and frozen veggies in a large skillet until done. Add the tomato soup and pour into a baking dish. Cover with mashed potatoes and a sprinkle of cheese and bake at 400F until the cheese is bubbly.)
