When I first made these double chocolate muffins, I chopped up an authentic chocolate frog for the chocolate chunks. Now they are forever one of our Harry Potter foods. :)
6 tbs. (3/4 stick) butter
4 oz chocolate, coarsely chopped
2 c flour
2/3 c sugar
1/3 c unsweetened cocoa powder
11/2 tsp. baking soda
1/2 tsp. salt
1 1/4 c buttermilk
1 egg
1 tsp. vanilla
Heat oven to 375o F and grease a muffin pan or place paper liners into each slot.
Melt the butter and half of your chopped chocolate in a double broiler over the stove.
Combine the dry ingredients (flour, sugar, soda and salt) in a large mixing bowl. In a separate bowl (or large measuring cup), mix the buttermilk, egg and vanilla together.
Combine the wet and dry ingredients and add in the butter/chocolate mixture. Mix just enough, then stir in the remaining chocolate chunks.
Use a cookie scoop to divide the batter between the 12 muffin cups, and bake for about 20 min or until a tester poked into the center comes out clean.
