Meatballs always seem very intimidating to make. Recipes usually call for 3 types of meats—pork, beef, veal. And the amount of spices are crazy! However, I found this recipe and LOVE it. Simple, cheap, and fresh meatballs anytime.
1 can (28 oz.) crushed tomatoes
¾ lb spaghetti
Meatballs:
1 lb ground beef
¼ c grated
parmesan
¼ c chopped fresh
parsley
2 cloves of garlic
1 egg
¼ breadcrumbs
olive oil
salt and pepper

Put a large pot of salted water on the stove to boil. Once the water boils, add pasta.
Meanwhile, in a bowl, mix Parmesan, parsley, garlic, egg, salt and pepper. Add the beef and breadcrumbs and mix gently. Form into 16 balls.
In a heavy pot, heat olive oil over medium heat. Add the meatballs and cook, turning occasionally, until browned (8-10 min.). Add the tomatoes and bring to a boil. Reduce to a simmer, cover partially and cook, stirring occasionally, until the meatballs are cooked through.
Once the pasta is done, drain and combine with meatballs and sauce. Toss gently and serve.
