Pineapple Chicken Skewers


Oh how I miss Psych... Pineapple!!

Tangy, refreshing, and the dipping sauce is the best barbeque ever. We make a double or triple batch of the sauce to have homemade barbeque anytime. :)

2 lb chicken breasts
1 pineapple

Sauce: 
1 c ketchup
¼ c soy sauce
¼ c honey
1 tbs. yellow mustard
¼ c brown sugar
2 garlic cloves, minced
1 lemon, juiced

*You’ll also need wooden skewers.

Heat the dipping sauce ingredients in a small-medium sauce pan over medium heat. Simmer, stirring occasionally until thickened (about 10 min).

Meanwhile, dice chicken and pineapple into 1 in. cubes. Thread onto skewers. (I find it works better if you have separate skewers for the chicken and pineapple because the pineapple tends to cook faster.)

When sauce is heated and mixed all the way through, set aside half in a dish for dipping. Use the remaining sauce to liberally baste the chicken and pineapple skewers.

Cook skewers on the grill until done (about 10-12 min).
