Apricot-Glazed Pork Tenderloin


If you want a super refined meal with very few ingredients, go for this. We were shocked with the taste and ease of this dish. Plus, leftovers taste great on a sandwich!

Pork:
2 pork tenderloins (12 oz each)
olive oil
salt and pepper

Sauce:
1 jar (1 c) apricot
½ c spicy brown mustard

Heat oven to broil and arrange the cooking rack 4 in from it.

Line a baking sheet with tin foil. Then, place the pork on the sheet and rub with oil, salt and pepper. Broil for 10 min.

While it is broiling, whisk the jam and mustard over medium heat in a small saucepan. Cook for about 3-4 min, then brush half the sauce over the pork.

Broil the pork for 5-10 more min (until you see blackened spots). Cool for 5 min, slice, top with the extra sauce, and serve!
